    Campo Grande only works with farmers who raise heirloom Ibérico heritage pigs – a protected species in Spain.

    These pigs digest fat similar to Wagyu and store it in the muscle, making the meat extremely marbled, rich, and juicy.

  • Feed

    The pigs’ diet revolves around whole cereal grains (wheat, barley, oats, etc) supplemented with nuts. This gives the meat a unique depth of flavor.

    High in oleic fats — the same heart-healthy fats found in extra virgin olive oil.

    Removing corn eliminates seed oils, which are unhealthy for animals and the meat eaten by consumers.

  • Farmers

    Campo Grande works with family-owned farms in southern and western Spain—Extremadura and Andalucia.

    Every pig has a government passport. Each sow and sire (reproduction Male and Female) is registered with the Spanish government and inspected ensuring genetics and farming standards.

Butchering

Campo Grande processes and hand butchers everything in Spain.

The meat is “HOT BONED” and gets broken down before the carcass chills.

The meat cuts like butter and allows Seam Butchering of whole muscle cuts.
