Fourth-generation cattle farmers John, Keith, Alex, and Chauncey Hammond have been breeding wagyu on Robbins Island since the early 1990s. The beef features Marble Scores of 4-6, 7-8, and 9+, offering a unique taste due to specific Wagyu genetics, a clean environment, and a grain ration that mimics the island's flora.
The Difference
The product is labeled as either 'Spring' or 'Autumn' to highlight seasonal nutritional and climate differences. The herd is selectively bred for the rare 'soft fat' gene, prized by the Japanese for its lower melting point and creamy texture.
